Homemade pad thai

Confession: Every meal with pad thai on this blog has been made from some sort of a box/kit, the sauce likely full of ingredients I can't pronounce and squeezed out of a silvery, plastic packet.  But that changes now, with the discovery of this recipe.  

The hardest part was finding the rice noodles at the grocery store; a task I made more complicated than necessary by assuming they would be lying on the shelf in a plastic bag, rather than standing up in a box.  Hope this tip helps someone else avoid multiple trips down the import foods aisle.


Following the advice in several of the comments, I doubled the sauce recipe (but stopped at 5 Tbsp of sugar instead of the full 6 because it seemed like a lot).


I also kept it vegetarian, eschewing chicken and shrimp for some pan-seared tofu, seasoned with salt, pepper and a little paprika.


In typical fashion, I added vegetables until the whole dish threatened to overflow onto the stove...


...which it pretty much did with the addition of the tofu and garnishes.


I carefully scooped some onto a plate, squeezed some lime juice on top (don't skip this step!) and ate.


I was quite pleased with my first foray into homemade pad thai; it tasted like I expected and made great leftovers.  Two really good things, as I have a 1/2 box of rice noodles and 3/4 bottle of fish sauce lingering in the cupboard.

A Week of Eats--Chicago Edition!


I had the opportunity to go to Chicago for the American Planning Association's Annual Conference this past week/weekend.  While the weather was a bit of a shock--they don't call it the Windy City for no reason--the conference was pretty good, the sightseeing a lot of fun, and the eating more than a bit over the top.

A Week of Eats--April 1

My best eats this week were away from home--the catered lunch for the admitted graduate student open house on Monday, pizza from Christian's before class Wednesday night, and dinner at the Whiskey Jar on Friday with my housemate's visiting relatives.


At home, I didn't eat nearly enough fruits and veggies; they just didn't appeal to me this week.  Even my usual breakfast smoothies were a little disappointing.  Here's what I ate instead:

a) Grilled cheese sandwich with sliced turkey and banana peppers
Leftover sweet potato wedges and quinoa salad on the side

b) Leftover Quartet
Tamale Pie, Green Beans, Brazilian Black Beans and Quinoa Salad
Pretty good combination, actually

c) Veggie Burger with Queso Fresco 
Sweet potato wedges on the side

d) Breakfast burrito
Eggs, turkey, cheddar and salsa verde

Eggs-tra! Eggs-tra!

Happy day after Easter!

Yesterday I hosted a small potluck for a few of my classmates.  The original plan was to have a picnic in the park, but it rained so people came over to my house instead.  Not only did we stay dry, but I was forced to do a quick clean of the bathroom, kitchen and living room, something that needed to be done and probably will not be get done again until after finals.  Potential house guests have been warned!

My additions to the spread included mimosas (no leftovers), quinoa salad (way too much left over), and these seasonal treats (a decent amount of leftover nests, not enough leftover 'eggs').
 

There are several versions of this "recipe" on the interwebs; I followed the one from "The Art of Dessert," a blog I think I will be visiting again in the near future...



And with that, it's April and high time for some nice weather 'round here.  Please?
